Potato-4 small ones
Carrots-2 medium ones
Parmesan cheese-3 tbsp
Mozaralla cheese shredded-3 tbsp
Parsley leaves chopped-1 tbsp
Garlic grated – 1 clove
Egg yolk (slightly beaten)-1
Bread crumbs-1/2 C
Boil Carrots and potatoes until tender.
Mash the potatoes and carrot in a bowl.
Add parmesan cheese,mozaralla cheese into the bowl incorporate well.
Now add the garlic,beaten egg yolk and stir well.
Now shape into desired shapes.
Dip each in beaten egg white and then in the bread crumbs.
Now these can be shallow fried in oil until golden brown.
These can be baked to perfection as I have done here. If baking, spray or brush with olive oil on both sides,then place on greased baking sheet and bake in a preheated oven at 190 degrees until golden brown flipping over 2-3 times in between the baking.
