This recipe is a great way to load those veggies..It goes well with chapatis giving you a healthy combination.
Ingredients:
Carrot-1
Beans-6-8
Cauliflower florets -1 C
Green peas-1/2 C
Potato-1
Cumin seeds-a pinch
Curry leave-2 sprigs
Tomato-1
Red chilly powder-1 tsp
Turmeric powder-1/2 tsp
Coriander powder-1/2 tsp
Cumin powder-1/2 t sp
Garam masala- 1/4 tsp
Kasuri methi-1 tbsp
Water-1/4 C
Oil-2 tbsp
Salt
Cut carrot,potato and beans in lengths of even size.
Heat oil in a pan and splutter the cumin seeds,then add the curry leaves.
Now add the tomatoes sliced in thin circles so its mushed up quickly.
Once mushy start adding the spice powders except the garam masala.
Now add all the veggies along with salt and water. Stir to coat well and cook covered until tender.
Now add the kasuri methi and garam masala.Adjust the salt.
Mix well and keep on high heat for a few mins to evaporate the moisture.
Serve hot.
Note:
If u like the veggies crispy, you can reduce the cooking time.
Spices can be adjusted according to personal preference.
