Ingredients:
All purpose flour- 1 1/2 C
Yoghurt-1 C
Baking powder-1 1/2 tsp
Baking soda-1/2 tsp
Vegetable oil-1/2 C (I used Canola)
Sugar-1 C
Vanilla extract-1 tsp
Milk-1 tbsp
Preheat the oven to 180° degrees.
Grease the baking dish and dust with flour.
Sift the flour and keep aside.
Measure the yoghurt into a bowl and beat it to get it smooth.
Then add the baking soda and baking powder into it and beat it well. You will notice bubbles in the yoghurt within minutes
Mix the vegetable oil, sugar, milk and vanilla extract very well in a large bowl.Into this add the yoghurt and beat well. Then gently fold in the flour into it.
Pour the batter into the baking dish and bake for about 40 mins or until a toothpick inserted comes out clean.
Notes:
I have sandwiched the cake layers with raspberry jam.You can serve with any of your favourites but its too good on its own .You wont feel like its missing the usual ingredients like butter or eggs
Recipe adapted with slight changes from http://sojosmasala.blogspot.com/
