Baked Salmon cutlets

 Ingredients:
Onion – 1 large chopped fine
Ginger- a small piece
Garlic-4-5 cloves
Green chillies-4-5
Salmon fillets*-6-8 (shredded)
Pepper-1 tsp
Salt as required
Potato- 2 medium size boiled
Bread crumbs-2 C
Egg -2 or 3
Oil

*I have used grilled salmon fillets that has been marinated with just salt and pepper so as not to lose the salmon’s original flavor.You can use salmon that has been cooked any way or leftovers from any recipe.

Directions;
Heat a pan with about 3 Tbsps of oil.
Add chopped onions and saute until translucent.
Grind the garlic,ginger and green chillies into a coarse paste.Add this into the pan and saute until the raw smell is off.
Next add the pepper and salt.
Then add in the shredded Salmon meat.
Fry for about 5-8 mins until it turns a light brown color.Remove from heat and let it cool.
Mean while mash the potatoes in a large bowl very well.
Beat the eggs with some salt and set the bread crumbs ready.
Once salmon mix is cooled stir it into the mashed potato bowl. Mix it well until combined.Check the salt and add as required.
Shape it into cutlets of desired shapes.
Once shaping is done, dip each of it in the egg mix and then crumb it. Repeat until all pieces are done.
Fry them until golden brown in a shallow pan.
Finally serve them hot with sauce.

Notes:

  • Baking is also an option which is what I do most the time to have it guilt free.If baking, spray or brush each sides with olive oil, then place on greased baking sheet and bake in a preheated oven at 190° until golden brown flipping over 2-3 times in between the baking.
  • Other spices can be added as well to suit up your taste buds, but i refrained as dint want to spoil the delicate salmon flavor.
  • If you find the mix too loose and unable to shape,bread crumbs can be added to tighten up a bit.
  • Any fish with less bones can be used for this recipe.
