Daimond cuts or Maida cut cake

 Ingredients:
All purpose flour (maida): 2 cups
Semolina(rava or sooji): 1/2 cup
Castor sugar or powdered sugar: 3/4 cup
Baking soda: 1tsp
Salt: 1tsp
Cardamom powder: 1/2tsp
Clarified ghee or melted butter: 4Tbsp
Egg: 1
Water to knead

Sift all the dry ingredients into a bowl.
Then rub the ghee into the flour and mix it evenly.
Beat the egg and pour into the bowl and mix it up kneading roughly.
Now knead the dough adding water little by little until you get a smooth and firm dough.

Keep it covered with a damp muslin for about an hour.
Now divide the dough into 3 equal sized balls.
Roll each into a thickness of 1/2 inch.
Next using a knife cut it into strips vertically and then cut in horizontal line to get diamond shaped pieces.

Deep fry in  oil to a golden brown colour.

Spread all of them in a tray to cool completely.Then it can be stored in an airtight container for about a week in room temperature.

Note:

  • A variant method can also be found where you add  small or no sugar while kneading and after frying its put in sugar syrup and  dried.I like the mild sweeter version.
  • Once you start cutting the dough, do the frying and cutting simultaneously as the dough tends to dry quickly.
  • The size of the cuts is how you desire.
