Zeinab’s fingers – An Arabian Delicacy

   

This is an arabian sweet usually made with plain cheese as filling.But here in this recipe I have tried a different filling, adding some other ingredients to bring down the plain cheese sourness down a bit.You can try it with just cheese to make the authentic Usoob Al Zeinab aka Zeinab’s fingers.
    A crispy roll,cheesy inside oozing out sweet flavoured syrup,in a tiny bite is worth a try.

Ingredients:
Spring roll sheets square:20 nos


For filling

Cream cheese/cheese cubes :100 gms
Condensed milk :1/4 C
Milk:1/2 cup
Cornflour: 1 tbsp
Oil to fry
For gum:
White flour: 2 tbsp
Water

For the syrup:
Sugar:1/2 C
Water :1/2 C
Lime juice: 1 tbsp
Flavoring of choice( I used 3 crushed cardamom pods)
Directions:
1.Take 1/4 c of milk and whisk the cornflour into it.
2. Add the remaining milk and condensed milk into a pan and heat.
3.Add the cream cheese to it and mix well to avoid lumps.
4.When it starts to simmer add the cornflour-milk mix and stir until it starts to thicken.
5.After 1-2mins,remove from heat and set aside to cool.
6. To prepare gum to seal the rolls,take the flour in a small bowl and add enough water and whisk to get a thin paste.
7. For the syrup:

In a saucepan add sugar and water and heat it to simmer for about ten minute swirling the pan in between for the sugar to dissolve better.Do not stir.The syrup is ready when a spoon dipped in cooled has sticky syrup over its surface.At this stage add in the lime juice and flavoring of your choice.Boil for a min and remove from heat.Keep aside to cool.
8. The spring roll wraps after thawing cut each sheet into halves to obtain rectangle sheets.
9.Take one sheet while keep other sheets covered to prevent drying.On one end of the sheet place a teaspoon or less of the filling.
10.Roll the sheet tightly to get a cigar shape.At the end place a little flour gum and press firmly to seal the roll.Repeat these steps to get all the rolls done.
11.Heat the oil and fry the rolls on medium heat until slight golden color.
12.Drain the oil and arrange the rolls in a serving plate.

13. Drizzle sugar syrup over the rolls and serve.

Notes:
Sugar syrup is commonly flavored with any of the following: Rose water, Orange blossom water or Cardamom pods.
Samosa sheets also can be used for this in place of spring roll sheets.
Caution while frying, this can turn black very easily.
